The Faculty of Chemistry, Biotechnology and Food Science (KBM) at the Norwegian University of Life Sciences (NMBU), Campus Ås, Norway, invites applications for a fully funded 3-year PhD position in Food Technology. This opportunity is part of the 'Innovative baking technology to increase Norwegian self-sufficiency and food security (InNOBake)' project, funded by The Norwegian Fund for Research Fees for Agricultural Products. The project aims to develop and optimize modulated pressure processing for wholemeal wheat and wheat-free bread, contributing to national food security and self-sufficiency.
The successful candidate will conduct systematic research on the application of advanced processing technologies (kneading, baking, cooling) in bread making, focusing on improving bread quality, specific volume, and textural attributes, including changes during storage. The work involves experimental research at the Norwegian Institute for Food, Fisheries and Aquaculture Research (Nofima) in Ås, utilizing a state-of-the-art pilot-scale bakery. There are opportunities for short-term research stays abroad and participation in international conferences.
Applicants must hold a relevant MSc degree (food technology, food engineering, food science, chemical engineering, or related fields) and demonstrate a strong academic background. Experience in pilot-scale food processing, cereal science, analytical techniques for dough and bread, heat and mass transfer, mixing technology, or statistical analysis is advantageous. Proficiency in English is required, and knowledge of a Scandinavian language is a plus. Personal qualities sought include curiosity, ambition, diligence, teamwork, and strong communication skills.
The position offers an annual salary of NOK 550,800 and follows national guidelines for PhD scholars. The appointment is for three years, with the expectation of completing a doctorate within the scholarship period.
