PhD Opportunity | Advancing Plant-Based Protein Research
Our team is exploring how food processing techniques like Pulsed Electric Field ( PEF ) and fermentation can alter the functionality of plant-based proteins. We're developing non-invasive spectroscopic methods (Raman, FTIR, micro NIR) to understand how protein structure changes in unpurified isolates and complex food matrices.
This PhD project will focus on:
?? Developing rapid, non-destructive techniques for protein analysis
?? Assessing diverse plant seeds and protein-rich foods
?? Building predictive models to assess protein structure and content
