The PhD project will address nutritional approaches beyond individual foods, targeting populations with specific nutritional needs such as people with obesity, the elderly, and infants, who are at risk of nutritional deficiencies like protein deficiency.
The successful candidate will design and characterize plant-based food solutions using various ingredients and techniques, analyze food composition and structural characteristics, and evaluate in vitro macronutrient digestion kinetics. The project involves studying interaction effects in complex food systems and performing statistical analysis on the data obtained. The healthy adult condition will be used as a reference, and adapted in vitro digestion models will be developed for distinct population groups.
Applicants should have a Master's degree cum laude in Bioscience Engineering, Food Science & Technology, or a related discipline, with a strong interest in food science and basic knowledge of colloidal chemistry. Experience with in vitro digestion studies is advantageous. Candidates must possess excellent communication skills in English, proficiency in standard office software, and the ability to work both independently and collaboratively. Responsibilities include supervising bachelor and master students, reporting research findings to supervisors and at international conferences, and contributing to a dynamic and inclusive research environment.
