About this position

The red meat industry in New Zealand contributes $10.8 billion annually to the economy, accounting for approximately 15% of the country’s total export earnings. This vital sector employs over 25,000 people, primarily in rural areas. However, up to 1% of exported products are returned or rejected due to spoilage or contamination, resulting in financial losses amounting to tens of millions of dollars each year.

The primary cause of product spoilage is bacterial contamination. Bacteria form biofilms—a complex community encased in extracellular materials—that coat the surface of meat, producing off-odours and rendering the product unsuitable for international markets. This project seeks to combat spoilage by leveraging Host Defence Peptides (HDPs), natural components of the immune system in animals. HDPs are known for their ability to kill bacteria, including those within biofilms.

Our goal of the PhD project is to identify novel bovine and ovine HDPs, evaluate their activity against spoilage and pathogenic bacteria, and develop an HDP-based spray product.

We are seeking highly motivated students with an MSc degree whose research interests and experience align with the descriptions above. Methodologies include molecular biology, microbiology, and bioinformatics. Candidates must demonstrate substantial research experience, with their MSc thesis constituting a significant component of their degree. This must be clearly evaluated and listed on their academic transcripts.
