PhD Scholarship in Red Meat Functionality and Food Science at University of Southern Queensland
The University of Southern Queensland is offering a prestigious CSIRO iPhD Scholarship focused on red meat functionality, in partnership with Meat & Livestock Australia. This project aims to re-imagine the role of red meat in a healthy lifestyle by leveraging novel technologies to create new usages and occasions, transforming commodity red meat and by-products into functional food ingredients. The research aligns with global wellness trends for high-protein and iron-rich foods, as well as nutraceuticals such as collagen, and aims to improve carcass utilisation.
The successful candidate will join a multidisciplinary team under the supervision of Professor Paulomi (Polly) Burey, an experienced academic and engineer at the University of Southern Queensland. The project will use advanced technology platforms to harvest and convert meat components into high-quality ingredients, contributing to innovations in food science, nutrition, and industrial design. The scholarship includes a four-year stipend of approximately AUD $47,000 per annum (tax exempt), a project expense and development package of $13,000 per annum, a 60-day industry engagement component, and a structured professional development and training program to enhance applied research skills.
Eligibility requirements include completion of an Honours Degree with First Class or 2A Honours, or a Master's degree with a significant research component in a relevant discipline such as Food Science, Industrial Design, or Project Management. Candidates should have relevant experience in the food industry, ideally with knowledge of new product development, process improvement, and product launch protocols. Strong written communication, presentation, and interpersonal skills are essential, as is the ability to work effectively within multi-disciplinary teams. Applicants must be domestic students or have permanent residence and be eligible to commence or continue a PhD in March or April 2026. Proficiency in computer systems, project management, and research methodology is also required.
