PhD in Food Safety, Mycotoxins and LC-MS/MS for Soy Products Ghent University in Belgium

Ghent University is recruiting a fully funded PhD student for a 4-year doctoral project within the SOYSAFE project, focused on food safety, mycotoxins, soy-based food products, and the protein transition toward more plant-based diets.

The research will examine how mycotoxins behave during processing steps such as protein extraction, texturization, and the production of plant-based meat alternatives. The project uses LC-MS/MS, laboratory experiments, pilot testing, data analysis, probabilistic modeling, and Belgian consumption data to estimate exposure and evaluate public health impact.

The position is based at Ghent University and involves collaboration with ILVO, Sciensano, and the FPS Public Health. The work is interdisciplinary and combines analytical chemistry, food technology, modeling, and public health-oriented risk assessment.

Applicants should hold a Master’s degree preferably in Bioscience Engineering, Pharmaceutical Sciences, Chemistry, Food Technology, or a related field. Experience with LC-MS/MS or similar techniques, modeling, data analysis, and plant proteins is an advantage. Strong English, communication, organization, accuracy, teamwork, and motivation are highlighted.

The appointment starts 1 September 2026 at the earliest. The fellowship is 100% of the net salary of an AAP member under equal family circumstances and is described as a tax-free doctoral fellowship.
