The Free University of Bozen - Bolzano is offering postdoctoral positions in the fields of endocrinology, nephrology, food and wellness science under the supervision of Professor Marco Gobbetti. The research project focuses on the nutritional features of food processes, with an emphasis on evaluating the nutritional quality and digestibility of foods, the bioavailability of micronutrients and bioactive compounds, and the impact of domestic and industrial processing technologies on these variables. The ultimate goal is to contribute to the development of healthy and preventive dietary models that positively influence the composition and functionality of the gut microbiota.

Successful candidates will be expected to carry out assessments related to food nutrition, digestibility, and bioavailability, as well as investigate the effects of food processing on health outcomes.
