About this position

PhD position in Food Science / Food Technology at the Technical University of Munich

The Chair of Plant Proteins and Nutrition at the Technical University of Munich (TUM) is recruiting a doctoral researcher for the project FROSTEX – Freeze Structuring of Plant Protein and Carbohydrate Systems. The position is based in Freising-Weihenstephan and starts on February 1, 2027.

The project explores how anisotropic, fiber-like structures can be created and stabilized in plant-based food systems through controlled freezing. The research sits at the interface of food science, food technology, protein chemistry, food processing engineering, and structure-function analysis. The successful candidate will investigate raw material properties, process parameters, microstructure, texture, and stabilization strategies for freeze-structured food systems, in cooperation with the University of Hohenheim and industry partners.

Core topics include plant proteins, carbohydrate systems, food structuring, gelation, cross-linking, physicochemical characterization, rheology, and statistical data analysis. The role also involves scientific exchange, publication of results in international journals, and presentation at conferences.

Applicants should hold a very good Master's degree or equivalent in food technology, food science, food chemistry, biotechnology, or a related field. Strong interest in experimental laboratory work and analytical investigations is expected, along with good English skills and mandatory German skills at C1 level. Experience in protein analysis, food characterization, rheology, gelation, or food processing engineering is an advantage.

The position is funded as a 65% TV-L E13 doctoral research associate contract for 3 years. Benefits include modern laboratory infrastructure, close supervision, a collegial international environment, and integration into the TUM Graduate School.

Application deadline: October 31, 2026. Apply by sending a single PDF with motivation letter, CV, certificates/transcripts, and two academic references to [email protected].

What's required

A very good Master's degree or equivalent in food technology, food science, food chemistry, biotechnology, or a related field is required. Applicants should have a strong interest in food structures, food processing, and plant proteins, enthusiasm for experimental laboratory work and analytical investigations, and interest in structure-function relationships in complex food systems. Sound knowledge of food chemistry and/or food processing engineering is preferred, ideally with knowledge of protein chemistry. Independent, structured, and meticulous working style, excellent communication and teamwork skills, good written and spoken English, and German language skills at least at C1 level are mandatory. Experience in physicochemical characterization of food, protein analysis, rheology, gelation, or food processing engineering is advantageous but not required.

How to apply

Prepare one combined PDF containing a motivation letter, CV, university certificates and transcripts, and contact details of two academic references. Send the application by email to [email protected]. The deadline is October 31, 2026.
