About this position
Technical University of Munich (TUM), Chair of Plant Proteins and Nutrition, is advertising a PhD candidate / research associate position in Food Science / Food Technology within the project HempDualValue – Quality-Oriented Process Development for the Equivalent Use of Hemp Seed Oil and Hemp Meal.
The project focuses on the processing of hemp seeds to obtain both high-quality hemp seed oil and protein-rich hemp meal for food applications. Research topics include seed selection and physicochemical characterization, conditioning and dehulling, roasting and mechanical pressing, statistical design of experiments, protein quality, techno-functional properties, and the evaluation of hull fractions as food ingredients. A collaboration with the Chair of Biothermodynamics is included, with additional work on supercritical CO₂ post-oil extraction and ingredient application in selected food systems.
This is an interdisciplinary doctoral position at the interface of food processing engineering, plant proteins, food chemistry, and sustainable food production. The successful candidate will work in laboratory and pilot-plant settings, analyze process-product relationships, publish results, and present at scientific conferences.
Funding: 65% TV-L E13, fixed-term for 3 years. This is a salaried doctoral employment position, not a scholarship.
Eligibility highlights: very good Master's degree (or equivalent) in food technology, food science, food chemistry, biotechnology, or a related field; strong interest in experimental work and analytical investigations; good English; German at C1 level is mandatory. Experience in plant-based raw material processing, physicochemical food characterization, protein analysis, or statistical experimental design is helpful but not required.
Location: Freising-Weihenstephan, Germany.
Deadline: 31 October 2026.
How to apply: Send one combined PDF with motivation letter, CV, university certificates/transcripts, and contact details of two academic references by email to [email protected].
