About this position

Postdoc opportunity in Food Microbiology and Fermentation at the University of Copenhagen, Denmark. The Department of Food Science, Section for Food Microbiology, Gut Health and Fermentation is inviting applications for a 15-month postdoctoral position focused on Bacillus and fungal mono- and co-culture fermentations for improving the nutritional and structural properties of plant-based food matrices.

The position is part of the PROFERMENT project, “Solid-state fermentations for protein transformations and palatability of plant-based foods,” funded by the Novo Nordisk Foundation. The research sits at the intersection of food microbiology, fermentation, biochemistry, and food structure/rheology, with emphasis on plant-based matrices and metabolite formation.

Research themes include: cultivation and characterization of Bacillus spp.; cultivation of food-grade fungi such as Rhizopus and/or Aspergillus oryzae; metabolite analysis (amino acids, flavour compounds, and others); structural/rheological characterization of fermented foods; and solid-state plant-based fermentations.

Eligibility highlights: the applicant should have solid, documented experience in several of the listed areas. The postdoc also includes research duties and may include teaching and other duties.
