About this position

DTU Food at the Technical University of Denmark is advertising a PhD position in in vitro formation of N-nitrosamines during digestion. The project sits at the intersection of analytical chemistry, food chemistry, in vitro digestion models, gut microbiome, toxicology, epidemiology, and public health.

The research focuses on how endogenous N-nitrosamines form during digestion, how dietary composition and gastrointestinal conditions influence nitrosation reactions, and how these exposures may relate to chronic disease risk. You will work with the INFOGEST digestion model, faecal fermentations, LC-MS/MS analysis, and statistical/data analysis in R.

Responsibilities include designing and running digestion experiments, studying the effects of dietary sources such as vegetables, processed meats, and water, and testing promoters/inhibitors such as vitamins, flavonoids, heme, pH, and fat content. The role also includes PhD coursework, teaching activities, scientific writing, conference presentations, and stakeholder engagement.

Eligibility highlights: a two-year master's degree (120 ECTS) or equivalent in analytical chemistry, food science, environmental science, toxicology, or a closely related field; strong interest in chemical food safety and human health; experience with or willingness to learn LC-MS/MS/chromatography, in vitro digestion models, experimental design, and statistics using R; excellent English communication skills.

Funding is a 3-year PhD scholarship subject to academic approval, with salary and appointment terms under the Danish collective agreement. The position is located in Kgs. Lyngby, Denmark. The application deadline is 2026-09-04.
