About this position

DTU BRIGHT is advertising a PhD scholarship in assessment of health impact of microbial foods in vivo at the Technical University of Denmark in Kgs. Lyngby, Denmark. The project sits within BRIGHT Mission 2 on microbial foods and focuses on how fermentation, biomass composition, and processing affect host-relevant nutritional and metabolic outcomes.

The PhD student will work in animal nutrition, host-microbe metabolism, microbiome, and metabolic health, helping design and run murine feeding studies. The work includes pairwise comparisons of plant substrate, fermented food, extracted biomass, extruded plant protein, and meat, and measuring endpoints such as protein digestibility, microbiome composition and function, gut barrier markers, lipid metabolism, glucose handling, and appetite-related hormones.

The project is highly interdisciplinary and connects DTU Food, BRIGHT, and UCSF collaborators. The results will feed into predictive health models and the design of future human clinical trials for microbial foods. The broader BRIGHT programme uses AI-powered design, multi-omics, sensory analysis, life-cycle assessment, safety testing, and translational evaluation to develop microbial foods that meet targets for consumer acceptance, health, sustainability, and scalability.

Eligibility highlights: a two-year Master’s degree (120 ECTS) in animal nutrition, host-microbe metabolism, gut biology, or a related field; excellent organization and project management; fluent English; and familiarity with IT/AI systems. Preferred experience includes rodent husbandry, microbiome sequencing/analysis (16S or shotgun metagenomics), and metabolic phenotyping methods such as indirect calorimetry or glucose tolerance testing.

Funding: this is a PhD scholarship with salary and appointment terms under the Danish collective agreement; the appointment is for 3 years full time. Start date is 01-01-2027 or by mutual agreement.
