About this position

Wageningen University & Research is advertising a fully funded PhD position in meat aroma generation in plant-based meat analogues through thermomechanical processing. The project sits in the Food Chemistry and Food Process Engineering laboratories and focuses on how aroma precursors, protein texturization conditions, and protein sources can be combined to improve meat-like aroma and reduce off-notes in plant-based meat products.

The research is highly interdisciplinary and combines flavor chemistry, food processing, analytical chemistry, and sensory evaluation. You will design and run experiments, help develop analytical methods, and characterize aroma compounds using advanced techniques such as GC-HRMS and UHPLC-HRMS. The work also includes publishing in peer-reviewed journals, presenting at conferences, and supervising BSc/MSc students.

Eligibility highlights include an MSc degree in Food/Analytical Chemistry or a related field, experience with gas chromatography and/or mass spectrometry, preferably chemometrics, and an interest in food processing or protein texturization. A strong command of English at C1 level is expected.

Funding includes a fully funded PhD salary under the Dutch university collective agreement, starting at €3,204/month and rising to €4,051/month in year four, plus a tailored training program. The contract is initially for 18 months and may be extended for the project duration.

The position is based at Wageningen University & Research in the Netherlands. The application deadline is 31 August 2026. Applicants must apply via the vacancy page and upload a CV and motivation letter; only applications submitted through the website will be considered.
