Bjørn Tore Nystrand is an Associate Professor at the Norwegian University of Science and Technology in Norway. His research focuses on psychosocial determinants and geographical contexts influencing consumers' choices of alternative protein foods, as well as the characteristics of built food environments. Additionally, he explores individual differences in functional food consumption, considering traits and values, and has contributed to strategic discussions on the establishment of a seaweed industry in Norway.
