Deborah VanOverbeke is the Department Head at the University of Nebraska–Lincoln, USA. Her research focuses on meat quality, specifically exploring mitochondrial proteomic signatures in beef, glycolytic and mitochondrial protein profiles in postmortem muscle, and the effects of various packaging and antioxidant treatments on meat tenderness and consumer perception. Her recent publications demonstrate her expertise in the areas of beef and pork quality, as well as advancements in meat preservation and sensory evaluation.
