Dr. Sonia Ramos-Gómez is an Assistant Professor at Universidad de Burgos, Facultad de Ciencias in Spain. Her research focuses on food safety and processing, as evidenced by her recent work on detecting adulteration in olive oil and the microencapsulation of food-grade proteases. Additionally, she is engaged in exploring innovative therapeutic approaches for cancer treatment through the design of metal-based complexes and the application of enzyme immobilization in juice processing.
