About this position
This PhD project focuses on Food Oral Processing and the development of bioinspired robotic and sensor-based tools to better understand how food structure and acidity influence salivation, mastication, bolus formation, texture perception, and swallowing.
The work is rooted in ongoing efforts to reproduce oral processing mechanisms realistically and holistically in vitro. The doctoral research begins with a detailed review of the scientific literature on salivation mechanisms, then moves to the development of sensors for real-time measurement of food and bolus properties during oral processing. These sensors will support more realistic control of in vitro experiments.
The project also combines sensory studies and in vivo characterization of the effects of different food products on salivation and bolus formation. These results will be used to calibrate the in vitro food oral processing experiments, creating a feedback loop between experimental measurement and robotic modelling.
The PhD is based at the Sayfood research unit at INRAE within Université Paris-Saclay. The supervisory team is led by Marco Ramaioli and Anne Saint-Eve, with collaboration envisaged with Carole Prost at Oniris, Nantes. The position sits in a research environment that combines food science, oral processing, robotics, and experimental measurement.
The project is connected to recent work on artificial mouths, hybrid soft/rigid robotic masticators, and in vitro swallowing devices, indicating a strong focus on biomimetic platforms for studying oral mechanics and food behaviour.
