Mei Hui Liu is a Senior Lecturer at the National University of Singapore. Her research focuses on dietary intake and its implications for atopic dermatitis, cardiometabolic outcomes, and gastrointestinal health. Recent publications include studies on the effects of dietary fats and anthocyanins, as well as the impact of probiotic-fermented beverages on inflammation and gut microbiome. She contributes significantly to the understanding of nutrition in relation to health challenges faced by young adults in Southeast Asia.
