Susana Dias is an Adjunto Professor at the Instituto Politécnico de Coimbra, Portugal. Her research areas encompass food science and technology with a focus on probiotics, bioprotective cultures, and their effects on dairy products, as well as the bioactive properties of agricultural by-products. Recent publications include investigations into the quality of butter influenced by probiotics and the microbial characterization of traditional codfish curing processes.
