Laura Escrivá

Laura Escrivá is an Assistant Professor at the University of Valencia, Spain. Her research focuses on the protective effects of probiotics, the characterization of lactic acid bacteria, and the reduction of mycotoxins during food processing. She is also involved in studies assessing the antioxidant activity of bioactive peptides and the endocrine disrupting properties of various compounds. Her recent contributions include biomonitoring mycotoxins in patients and evaluating the bioaccessibility of toxins in fortified food products.
